I have a 3 yr old little boy and a 2 yr old little boy. My 2 yr old is almost potty trained but my 3 yr old is being a little more difficult. How can I get him more into it and is it better to train them standing up or sitting down?
I do not show favorites! I give the same praise and the same amount of attention to BOTH of my kids!

Get some potty books, and potty videos.
Let them see you go potty, better yet if husband shows them how he pee's (since they got boy parts).
Usually then kids get really interested in it.
But all kids are different, even if siblings), and each go at their own pace.
Easiest way to is when he decides he is ready, one day he will start using the potty, and never go back. My sister is a daycare provider and that is the advice she gave me, and I applied it to my two kids,and it worked. My son just turned 3 and he loves the potty movie, and always want to use it after watching it. He has days when he wears underwear and other days where he wears diapers. I don't push him, but I ask him more often now if he wants to use the potty.
He gets one tiny piece of candy for going #1, and two pieces for going #2...so he always tries to go #2 in the potty to get two treats...little stinker.

I will be baby-sitting two children, a 3 yr old girl, and a 7 month old, soon for 7 hours each day for a while and I need some guidelines and some ideas on what would be fun activities for the 3 yr old and what I'd have to look out for with the 7 month old? Thank you in advance!!

Oh boy, you got your work cut out for you, but it can be extremely fun. The 7 month old probably won't be that hard to handle while taking care of the active 3 year old.
I have a 3 year old, she likes to play games. Particularly matching games. You didn't mention how old you are so I'm not sure if you are willing to spend s few dollars on some games if they don't have any. I just bought my daughter a hello kitty matching games for $6. She loves it and can entertain her with or without me for hours. She gets so excited when she finds a matching pair.
Also books, some kids will not sit thru books at this age, but I found a really cute site where kids can make their own books. You simply print out the pages either in color or not (i do them black and white so she can color the pages, I don't really see much of the point of this site unless you do let the kids color them, it would be cheaper to buy a book vs all the colored ink) anyway, you could ask the parents if it would be ok to print them at their house, if not you could print them at your house before hand, the site it http://www.dltk-teach.com/minibooks/index.htm
My 3 year old likes to make bracelets, I buy a cheap lisa frank activity kit and it comes with beads, glitter, pipe cleaners, sequins etc, and you can make bracelets, bookmarks, sun catchers, key chains etc. You can get them really cheap with like 20 activities for like $10.
If you don't want to spend any money I'm sure she has lots of toys, I would suggest only letter her take out one toy or toys set at a time so she is more focused on one activity and it's less messy.
Color is always fun for kids those ages, maybe watch a movie with her and make it sorta special by popping popcorn or having a special snack for the movie.
The 7month old, hmm, it's been so long since I had to entertain one, but I don't remember mine doing to much at 7 months, lots of making faces, rattles, holding and cuddling. I'm sorry..... I can't be much more helpful on the little one. Peek a boo, maybe a finger puppet show, the 3 rd old could definitely help with that... my 3 year old is very aware and I think she would have fun with a 7 month old so, i'm sure the one you are gonna watch is the same way. The 7 month old will probably nap a lot.... if you get really stuck search online for 7 month old activities.
