I need some good informative books, but they need to be fairly easy to read and comprehend.

I'd not suggest Gibbon. It is very long, very biased and hopelessly out of date. History has moved on and much of what Gibbon asserts is simply wrong.
I'd suggest instead "The Oxford Illustrated History of the Roman World" edited by Sir John Boardman (Oxford University Press, 2001). It's comprehensive, easy to read and comprehend and contains up-to-date information, chronologies and maps, arranged by period and by theme. Its editor is a world-authority on the Roman world. It also has a comprehensive list of books for future reading.
An alternative is "The Cambridge Illustrated History of the Roman World" by Greg Woolf (Cambridge Illustrated Histories, 2003). It is a similar format, and again like the Oxford is a great introduction.

"Legion: the Definite History of every Imperial Roman Legion" by Stephen Dando Collins (Easy to read, GREAT battle descriptions).
A Bit of everything:
"Ancient Rome" by Nigel Rodgers (Very easy to read!)
A Classic:
"Rise and Fall of the Roman Empire" by Edward Gibbon (The best!)
Some of the REAL Classics:
Anything by Tacticus, Amminus, Julius Caesar, and Livy
A Handbook:
"Legionary: The Roman Soldier's (Unofficial) Manual" by Philip Matyszak (Very funny, Becuase its true)
So, you want to be a Gladiator?
"Gladiator: The Roman Fighter's (Unofficial) Manual" by Philip Matyszak
What about Byzantium?
"The Byzantine Empire" by Charles William Chadwick Oman
