I know theres a bunch of different psychologies out there but
in the movie "Mindhunters" when they all get to the island
they start "profiling" each other,
refered to in the movie as "psych 101 bullshit"
what psychology is used?
(like tatoos meant resentment for parents, bad relationship,
watches his words, that she was sleeping with one of them,
or that she'd crack under pressure). its almost like cold reading.

Psychoanalysis is what you're describing. There are different types of psychoanalysis though. Lacanian, Freudian, Jungian, etc...
Read either Lacan, Freud or Jung. You don't necessarily need a formal degree or anything to be that "good" but you need to read a lot, think a lot and practice a lot.
If Lacan is too hard to understand, Slavoj Zizek wrote a book called "How to Read Lacan". You might want to try that first.
